If you walk into one of 8th and Roast’s locations to try its new menu, you might see the two familiar faces behind it. Following Sinema’s closure, chef Shelby Briggs and pastry chef Caleigh Collins took their talents to the company’s sister concept.
The two restaurants are different in their own right, but the transition has given the duo more time to tap into their creativity and hone consistency across the three streetside shops — putting their own spin on flavor profiles and even exploring after-hours pop-up concepts.
Let’s get to the question you’re all wondering, though, “How can I cook like that?” They gave us a peek into their own kitchens, where we discovered the secret to what makes 8th and Roast’s chocolate chip cookies so irresistible and their favorite spots to pick up ingredients.
3 ingredients in their kitchens
Briggs— “I tend to gravitate towards Asian ingredients, so I have a lot of chili paste and soy sauce in my kitchen.”
Collins— “You can find a variety of vanilla in mine — Mexican vanilla, vanilla paste, Madagascar vanilla — I think I have five right now.”

Use these tips to prepare for severe weather season. | Photo by @kirsten.lee.anderson
From 12 p.m. today until 6 p.m. tomorrow, the Middle Tennessee region is under a wind advisory with expected gusts up to 45 mph.
This serves as a reminder that March begins the area’s three-month peak period of severe weather and tornadoes. Here’s how to prepare for these potential hazards, courtesy of the Tennessee Emergency Management Agency (TEMA) and NWS:
Make emergency preparedness kits | Recommended items include one gallon of water per day, per person (three to five days), non-perishable food, flashlights, a battery-powered radio, extra batteries, first aid kit, cell phone charger, and important documents.
Have multiple ways to receive weather alerts | Monitor local TV and radio stations and have access to a NOAA weather radio. You can also receive weather notifications by phone, text, or email via MEANS, the city’s emergency alert and notification system.

I have a friend coming into town to see me, and I thought it would be fun to switch roles for a second. You can be the expert and help plan my weekend. She wants to watch live music one evening, what non-ticketed spot do I take her to? Let me know.
